You could still use a terrain look like World Machine or World Creator. They provide a lot of flexibility over how you create and output your terrain. You will need how to learn to use them effectively first but the results can be marvelous
One serious issue you will probably face is the lack of compatibility between regalar Maya files and files coming from LT. It sounds minor at first, but as soon as you start sharing files with other content creators it might become a non-negligeable roadblock.
Was that the Paul Neale(Pen) series from CG Academy? Pretty much the definitive Max rigging go to. CG Academy went bang as the owner ran with content creators' money, but if you contact Pen directly he might be able to help you out.

Awesome work dude! Could you tell me more about the course, like did you take the creator plan, student one or one on one mentorship? And also how is the community, did you get access to there private community for lifetime or it is limited.
As far as i know, about bugs and help of a non public beta version software would be a lot better to ask it on the official beta foruns. Since very few people here tryed it already and bug reports might be a lot usefull for the program creators.
The Sketch-Up suggestion was a good one. Although, what's the deal with the blue axis not lining up? Is this the creator's issue? Unfortunately I don't have Maya Live =/ As far as messing with the camera's focal length, it seemed to only zoom in and out the scene. EDIT: Got it =]
