As others have mentioned you need to use something like Biped or CAT. These systems allow layering animation data on top of other animations. So you can add your hand animations using a animation layer.
The cabinet looks very glossy, I'd consider adjusting the gloss in DDO so it's not so bright. The variation of the plates is cool though, not sure how you made the modular plate system thing but it seems to have worked well :)
Well, Maya also has a backup function while crashing. It tries to save your files, but it puts on the temp folder of your system. You can grab the .ma file there. 20% of the times tho you wont be that lucky.
What you can do is split your object into subtools, each subtool can be the maximum your system can handle. It can be difficult with organics, you just have to be creative where you hide your seams.
I know already that this will be awesome. Though quite different from Dark Forces, I played Jedi Knight II: Jedi Outcast again recently. It's still fun. It's great that this games are available again and run on modern systems.

HTML5 is only for PhotoshopCC, therefore you'd have to so some sort of dual system, anything less then CC use ScriptUI and PsCC HTML5. When you decide I can help you design a HTML5 panel.
it does depend on how your AI/pathfinding/animation systems work you might just be able to not rig it at all. My guess is a basic rig with 2 bones, one as the origin that sits on the ground, and a second that you animate.
