Use the retopology workflow; place a plane in the world, edit mode, vertex mode, then down the bottom of the 3D viewport click the horseshoe magnet so it's not greyed out, enabling snap. The entire character's UV of face, legs, arms are all 1 patch, and I think it is UV'ed symmetrically. You left out unwrapping it to a ribbon - like the first image but with all the vertical seams welded, so you get a strip - this has distortion issues but is the easiest to paint.
