We've only been at Adobe for a year! :D I assume we're talking about Substance Painter? Substance Designer lets you choose between float and 0-255 for picking colors. That being said, revamping the color palette in both tools is on the roadmap!

The suit was marketed just as much for the original Crysis, Axis Animation even created a pre-rendered trailer for it: http://www.axisanimation.com/index.php?id=565&loc=GAMES. Maybe because it was PC only, it wasn't as popular with the mainstream market.
There's a number of modern and classic Porsches (550 anyone?) that I'd love to see in Forza, so yah, it's pretty shite on EA and Porsche's parts. Surprised MS didn't put the squeeze on EA since Forza's a big Xbox product.

I've also tried using a gradient map layer to confine the colours of the ID to a strict group of preselected colours ( all created with RGB values of 128 and 255 ) but again I can't get the positions correct by eye so theres some odd colours appearing
200cm is about 6 foot 5.5 inches, a good deal taller than an average person. Yes, I'd make them to scale. It shouldn't cause problems other than probably needing good detail texturing if you get the camera up close to the giants.
