Okay so, for anyone in the future having the same issue as above. This is how you (or at least how I fixed it) fix it. Add Control Loops (thanks Kyle) down the center and then bevel that towards the bastard edges.

I know I'm a bit late, but if anyone stumbles upon this issue in the future, the way to fix it right now, at least for me, is to go to the tool settings for the Move UV Shell Tool, and uncheck "Prevent Overlap".
A friend just got a HTC Desire from Future Shop and it rocks, its hands down the best smartphone I've seen yet. I think he is on a $50 per month, three year contract.
