In the UV editor, click on the options button in the lower right corner, and turn on "Use Custom Bitmap Size". Then you can set it to the dimensions you need. -

Oh and make sure you deselect the offset button after you're finished, cuz if you scroll ur mousewheel you're in for a nice fat crash. -

I too dislike the new layout. You can press the view button at the top to change it so it's sorta similar to the old layout.. But it's still worse. -

Maybe your F6 button is stuck (which switches automatically to Flat color), or If you're not using a flat material make sure Render > flat isn't on. -
