This is flipped triangulation during bake. And you are displaying it with a different triangulation from how it was when you baked. You can see it from the "X" shapes. Just triangulate your mesh before baking so this cannot happen.

I made one sorta based on X-Convict's highpoly material. It's not his setup, just my own remake of it. I just took a screenshot of the preview ball from the material editor viewport and then edited it a bit :) matball:
Maybe try using a different map size? I know in the June and July betas at least, build lighting is really messed up for maps bigger than 509 x 509. Could be fixed in newer betas, but not sure.

You can set the sorting order inside the properties of your objects. I solved a similar problem with a skybox and some particles this way. [EDIT] oops, sorry, I read too quickly, Hourences already said it. :x
