I don't know how you're baking them, but transfer maps and choose the diffuse option will do what you're looking for.

I prefer the sweater on. I haven't started adjusting the material yet, it's just a zbrush obj with a straight diffuse and nothing else.

lighting made everything look flat so it's hard to tell the quality of specular map. diffuse map definitely looks solid.

You could try baking the UV outlines into the diffuse texture, or store the UV outlines in the alpha channel of a texture to edit as you will.

If you need some specific alpha shape, you could apply black and white materials to your objects, then bake as diffuse.
