Too many steps imho. Faster: 1. Add an Unwrap modifier. 2. Edit mode 3. Polygon mode 4. Flatten mapping.

When you are using Skin modifier, and the model become completely white, you need turn off Vertex Color Display. Its a bug.

Color spray adds in those extra colors. You can lower the amount on the stroke intensity variance modifier, or try the normal spray stroke.

In Zbrush maybe try Geometry > MeshIntegrity > Check Mesh/Fix Mesh Geometry > Modify Topology > Close holes/Optimize Points/Weldpoints/MergeTris

On your high poly model, add an edit normals modifier, click reset, then re-export that mesh and rebake. See what happens after that.

It's best to learn one particular kind of modelling first, and avoid modifiers for a while because they're so incredibly diverse in what they each do

I also get an error message after exporting that says: -- Unknown property: "modifiers" in undefined Is something that I'm doing in error or ok to ignore?

Harden your UV Shell border edges, and soften everything else. The faceting is a dead giveaway that you need to modify your smoothing groups.

How did you do the noisy grip patterns? Is it just a plane with some sort of noise modifier laid ontop of the grip or something else?
