The Shen-Long style dragon and warrior show a lot of promise. The floating island looks really neat, but it'd be more interesting if you developed the concept further. All I can really say is that it's too bad that you don't want to finish some of these- they could be some solid portfolio pieces if you finished them.

Is this for a game engine? Because the method in the video won't support Unreal or Unity. Both import FBX files, and FBX doesn't supported animated UVs. When i worked on something like this I just created a few floating eye geometry shells. Then used a similar Set Driven Key method to adjust the scale down to 0.01.
the tools used back then were most likely alias poweranimator (precursor to maya) and softimage 3D. i can't say anything about alias but softimage worked pretty much like what we have today - IK rigs with floating control elements and the option to use blendshapes. vertex weighting to bind models to the rig.
