I think you need to challenge yourself to do a realistic character. Even if you don't plan to focus on that style, you need to be challenged to do things with more interesting forms. Regarding the UI, even the default one isn't as complex as it initially looks. With a little bit of time you'll learn what you need and when you'll need it, so you can start closing the dividers and relying m ore on shortcuts. I find it works really well with a tablet.
