it's just to show where the uv seams are. I always turn it off since i find it pretty useless in most situations. You can turn it off in teh command panel.. show uv seams or something

Edged faces on selection, and Bounding boxes OFF. That it's the default is mystifying. Just set a maxstart, and you'll never need to see them again, unless you work with someone who doesn't turn them off. Hurrr.
The way I look at it is, you need to have a good eye for anatomy, scale and proportions. You need to be able to tell whether a model looks a little off due to it's structure. Maybe I'm way off though.
Good info above. Anatomy is letting you down. You can practice using an app like Daz as reference. Free and the figures are customizable. Concentrate on structure. Get a handle on generic figures first. You can turn off textures and rotate about the figure to see how forms connect.

In case that download doesn't work, I've tossed a copy of Ubuntu 9.04in Dropbox which should also be able to boot off of CD. Let me know when you have it and/or I can take it off again.
You can turn on/off the ability to cast and/or receive shadow in the objects properties via right click. Just turn off recieve shadows for the hair mesh but leave cast shadows on, if I'm understanding your question correctly.
