Also try "resetting" the high poly object: create a cube and attach the high poly mesh, then remove cube in sub-object mode.

A real difference by seperating both the low poly objects and hi poly objects, still some artifacts though.

Was that object mirrored on object level by any chance? If there were any negative values in $.scale.controller.value or $.objectOffsetScale that would explain it.

The rules for the project are "no UV overlapping." So if I had UVs on an object and then duplicated that object, is it considered overlapping UVs?

On the low-poly object, go into Face sub-object, select all, Hide Selected Faces. Then try again.
