It's just physically correct reflectance values for PBR materials. You can use them thru RMB on reflectance color of the any layer and its applied on all maps. In your case just take skin mat then set "Quick PBR", apply color id, mask, duplicate layer and set another reflectance value, mask, color id and so on.
Starting around 1:20 in that video, he says he has no overlapping IDs, and then assigns a material ID by element. I skipped around, since I don't really know Max. Maybe someone else can chime in, but I'd imagine the next step from there would be to only bake certain matID's to only bake your unique shells.

I have never been a fan of the tutorial database sites when they are set out like that, they always confuse me. Yeah, skin is really the way to go. I've had the same problem with Physique in the past. Sometimes just closing and reopening the file with fix it, but I really don't know what causes it.
