Are you using this button to enlarge your sculpt? if so, hit this button, to reset the zooming and use this to zoom in/out of your model . -

pixel snap is on a flyout button under the vertex snap button and yes - you'll need a texture assigned to use it. -

Touch buttons really wouldn't work. I like the idea for the screen like that but you have to have actual buttons.
