Dynamesh doesn't play nice with thin meshes, especially if you are on a low dynamesh resolution. Bump up the resolution until you can play with it without destroying the mesh ever time you remesh.

I think lower is better is the right thing. Polyunwrapper seems to be slower on less objects and low resolutions but is way more faster then 3dsmax standard or version 1.0 at higher resolution with many objects;)
Question that I couldn't find on the page: Does the program use the game resolution when running, or the desktop resolution? because in all games I use a different res... Will it mess anything up?
That's not exactly correct. Post-process effects that contain some kind of blur are not resolution independent. The same kernel size will be used and because the resolution is 4 times larger, the amount of blur will appear to be 4 times less.
If your problem is resolution and the bad topology then increase the DynaMesh Resolution and dynamesh again, when you get the basic shapes done, Zremesh the whole thing to get a clean topology and start sculpting more details.
