I switched from Maya to Max for work too! Again, it took me only a few nights of the same 3D buzz, and digital tutors tutorials. Its pretty straight forward and in hindsight learning both just encourages more opportunity!
Have you fully completed a beginners guide to Maya tutorial? There are plenty to choose from, and they go over a ton of stuff. I've also taken this course on Pluralsight/Digital Tutors called Professional Tips For Modelling Complex Shapes. It was really great.
Thanks but the Retopo modifier really isn't an option for clean HS topology. I need to keep the geometry the same. The only reason I want to use Blender right now is for the Meshmachine Offset Cut. But if you wanna build a level like environment ( like http://wiki.polycount.com/wiki/Environment) and wanna use UE5 then maybe the style of this tutor is for you?
you could try something like this: http://vimeo.com/5147726 and then randomising the rotation and scale with a script if things look too uniform? i remember doing the set dressing tutorial video from digital tutors and using a similar method to place rocks on a beach.
