Try playing around with this pulldown dialog. Sometimes, for some magical reason the verts get positioned along a different axis than the UV, so you have to play around with it. I honestly don't know why or how to repeat it, but I believe if you switch to a different coord you will be able to get your verts back.

Ok apparently you can only mirror layers if you set a symmetry axis first, and you cant do that with something like a hand that has no mid point, so a hack around this might just be to throw a quadball in the center thats hidden inside your model that you can set the symmetry axis on before you start sculpting.
