Hi there, I recommend holding down shift and holding right mouse button to do any polygon modelling in maya. Once you get used to the context sensitive menus it is the fastest way to model in maya.
its a scalar parameter. holding 1 and pressing the mouse button places the same node. You give names to those parameters and he called it tessellation but it could be called whatever you want.
Try clicking the graph editor button just to the right of the time slider, then drag it out into its own window. I'm not at my machine so I can't guarantee that will work but worth a try.
The Geopoly button in the Ribbon will create shapes based on the number of edges available. For example, a face with 6 edges will become a hexagon, 8 > octagon, and so forth. Not exactly what you are asking for, but it's similar.
Cars in AAA games usally aren´t baked. Only small details like interior buttons or leather elements use baked normals. All parts of the car body are basically modeled.

I found another awsome thing in new zbrush. Go to: Tool > Surface > Noise > window popup > look for NoisePlug button. Now enjoy. I won't be spoiling such cool suprise :D .
