Interesting statement. I trust you speak from experience to give advice like that? Because so far @poopipe 's take sounds more believable to me. After all it's a job that's quite easily outsourced and swamped with 'good-enough' competition.
Most of the assets for big name games are built using one of a few large outsource studios that are capable of providing hundreds of staff for a project. internally the number will be much smaller. Turnaround time for an average set of modular props will be anywhere between a week and a month.
Between full environments and props, I'd focus on the environments. Prop work can easily be outsourced, while a good environment artist that knows how to create those props AND put them together in beautiful, balanced and optimized environments is a very valuable professional
here they probably have the biggest teams and besides that they still do outsource. i would not underestimate the amount of work for some of these games, on top they by far do not release all of their productions, we worked on a few titles which never saw the light of day.
