The hotkeys are on by default in 2010. This is the Keyboard Shortcut Override Toggle as previously mentioned - click this button: (Who I firmly believe is only in the software to piss people off)
BTW we will allow modifying the UVs of the mesh since the default UVs were made to get a perfect texel ratio but are far from packed in an optimal way.
It's three default load-outs for one titan frame, so only one type of titan is in the beta/demo. I've also heard the textures are lowered for the beta.

Pretty much anything, but the default Quake2 gl renderer will resample it down to 256x256 regardless of how high it is. Modern Q2 engines have no limits for skin dimensions.
