Actually, (Undo/Redo) Ctrl+Z doesn't change layers. (History Step Back) Ctrl+Alt+Z selects the previous edited layer. I've gotten into the habit of hitting Ctrl+Z then if I need to undo more I'll use Ctrl+Alt+Z. But just for single undos Ctrl+Z will keep your layer selected.
What do your Picker: Depth settings look like? Curvetube might have Once Z set by default. If so switch it to Continuous Z (Cont Z). CurveTubeSnap on the other hand should have that on by default.

I tend to make the base model, teswt it in z brush for potential problem areas, go back and fix them then test again until I have a base model worthy of z brushing, then I go for it. Z brushing can be very relaxing i agree though,like stroking a cat
