Xbox also supports AVI, MOV, etc format. If you want to convert FLV to WMV for Xbox, you may prefer to this step by step guide. It also applies to convert FLV to MOV, AVI, MP4, etc.

Is there a chance that you can put the model online so we can look at it and see if there's a problem with the model? Failing that, can you give us a step by step list of actions you took to do the uv mapping?

I don't think you should call it quits just yet, there's a lot more you can still do on the head texture. Here's a step-by-step paint-over example, I hope it's helpful to you.
So I added some more lights and Neons and also made this kinda stepped on foot step texture for the terrain. Going to be working on some small debris to place around and some more stands to place around.
