I'm not really sure what kind of environment to create for my portfolio.
What types of environments are effective in portfolios that can help
land a job? I was thinking about doing a horror game centered around
catacombs, but I'm uncertain if that's a strong choice, or if I should
focus on a city or a sci-fi environment instead, or do they not actually care and are more focused on the composition? What do you think?

That said, I can see how the setting affects what techniques you can showcase. So when you're planning a project, you could think about what techniques you want to show/ what would you like to work on. For example: Catacombs - modular kit, photogrammetry, sculpting, high to lowpoly. Sci-fi location: midpoly, use of trim-sheets.
