I made just a quick scan last year by my cheap old smartphone - Xioami Redmi 7A. Of some debris from a building renovation i went by by a chance. I loaded it into metashape, did high quality mesh from depthmaps and did texture (generic, mosaic, 8192*8192 px resolution), BUT (!). The texture came all "weirdy" and "ugly"... Didnt happened to me ever before i think... If i remember correctly ( i did the processing months ago and just today im asking about the problem :-) ).I THINK i tried it all - different blending methods, resolution, did the mesh again (this time from dense point cloud (i think)). I simply played around and tried different things (not probably all possibilities but many), yet it still comes out looking this ugly everytime... WTF...? Anybody any idea whats behind this and how to fix this problem...?

Might simply be a bug. Try rendering only with CPU/GPU if that's an option.
As for other possibilities: So you redid the whole project as well (you didn't continue to use data processed/prepared in an older version) and tried average blending instead of mosaik? Are there any photos in the bunch that have vastly different exposure? Try to deactivate those. You even can force it to use one image only, if I recall correctly, do your own UVs (or check the existing ones) and rebake/blend in a different software from several one photo versions if all else fails and you want/need to salvage a project at all costs.
* Unless you went into advance camera settings and set exposure, focal length and white balance same. This is an expected outcome for texture in MS, Try this dataset in Reality Capture as its more forgiving.
* Before building mesh in MetaShape, check the quality of your tie points and do gradual removal of erroneous points.
* Enable Ghost and Hole Filling filters, Estimate image Quality and Disabled bad images.

Sharing some videos below that helped me get through in MS, although I have switched entirely to RealityCapture as its being free to use and yields better result.
