Questions Regarding rigging

Hey Polycount,

I'm pretty new into rigging and there are somethings I'd like to do as a project but i've been told not everything is riggable. 

1.

is it feasible to rig a contortionist as seen below in 3d for a set of gymnastic animation shorts? I've seen a number of gymnastic clips in animation but most of them are limited to flips and breakdancing over displaying the flexibility of the human body.

2. 

For a group of humans of varying sizes, child, woman, man. Is it possible to use a single rig set up to bind the various 3d models of humanoid shape? I was thinking of creating a single rig with the ability to exaggerate hands and head sizes for all humanoids in the project.
