Which is better for someone starting out to have in their portfolio? Pieces that showcase modeling skills or pieces that showcase creativity?

Even though you are starting out, in the eyes of an employer, you are still competing with people who aren't.
That being said, you need to learn the crawl before you walk. Get the tools down, get the pipeline down. As you get more skilled, and confident in your skills, it will be easier to be more creative with your work.
