Ive looked everywhere, cant really find any tutorials on creating modular assets for big environments, Anyone know of any? even if its small,short, brief i dont care, i just need a helping hand!

Im creating a street scene, for example a London street, im okay with small assets, but its the buildings and modular pieces, i dont know where to start

I just dont know how to go about starting a big building, never had the experience, and i cant find anything on it to help

Look here. It's a good start.
Anyway... If you firstly go serching for references and look for the idea you want to create and, why not, make some sketches of the building you want to create. It's the best way, the rest is all techincs. Look for some other tutorials about modeling.
Don't know which program you use, but the way is the same.

It's not where you start that's important. It's where you finish.

Have you tried modeling a window or door first? Most buildings are repeated tiles of windows combined with some other kind of structural piece - like brickwork, stone or steel.
