i cant really remember much about it since its been so long since i played, but there was a card game in knights of the old republic at the cantina in the first part. Thats about the only one that's kept me interested past the first few minutes. Most mini games i've tried are pretty dull and i'd rather play the actual game
Pazaak in SW:KOTOR was fun. Like TCG blackjack kind of.
The semi-3d special stages in Sonic 3 and Sonic & Knuckles were fun. I used to play those a lot.
Some old skool memories: I remember playing Gradius in Legend of The Mystical Ninja quite a lot. Also, the 'escape from the hospital' bit in It Came From The Desert. Although that game was just a load of minigames put together so that probably doesn't count.
I think Gears of War's active reload is the most significant mini-game in recent years.
A tiny risk/reward gamble added to a simple mechanic but it's perfectly done. Gets you lots of small but satisfying hits as you nail one reload after another in the thick of a firefight.
I honestly don't even know if it really does give you a damage bonus... it's just fun to try and hit it bang on each time.
There was the Tower of Hanoi puzzle at one point in Mass Effect. It's easy once you know it, but I hadn't played it before and it was probably the most fun I had in the entire game. To put it in perspective, though, I thought Mass Effect was pretty dull and only remained playable due to its variation in gameplay.

That game was ALL mini games haha all equally fun though! I need to bust that out (I have the xbox version)
