Is there any way to change the colour of the edges after toggle isolate selected has been used. Mine are the exact same colour of grey as the background. Turning on the dim image also matches the edges to the same darker colour of grey, any ideas?

I can't duplicate this behavior, but have you looked in Settings>Color?

ALT+B will shift your viewport background and your UV background from a few presets. You could also manually set it in Window > Settings & Preferences > Color Settings > 3D View.

I figured out what the problem is, it appears to be a bug as far as I can tell. Do this to see the issue.

    1. in uv editor grid options turn off axes, grid lines, turn on subdivision lines, hide grid numbers hit apply.

    2. open uv editor and select some uv's

    3. toggle isolate selected and add selected uv's to the isolate selected set

    4. turn off the grid

    5. now I can't see edges.
