Modeling & Rigging Low-Poly Characters w/ Blood & Gore Setup in Maya LT for use in Unreal Engine 4

In my game in Unreal Engine 4, it's a very low poly game, each character is about 1000-1500 tri poly total. I need help with a starting point before I model the characters for the game with my team, the characters should be able to lose parts of their body like in Wolfenstein 2: The New Colossus or Left 4 Dead 2. I saw the official Valve documentation on the L4D2 wound creation. I also checked out the gore review on Wolfenstein 2 on YouTube (https://youtu.be/O2KK0oXOhv4). Can you give me a guideline or starting point that could help me model and rig my character correctly in Maya LT? I am using Unreal Engine 4. Correct me if I'm wrong, the L4D2 and/or Wolfenstein 2 uses very similar method for their blood & gore, it's basically a decal the cuts out the model and replaces the hole with a gore model, right?
