Tumbling (overturning) beach waves in UE4!

Hi guys! I've been working on this project for quite a while now, and find myself somewhat stuck. I'm relatively new to the business, so perhaps the veterans can give me worthwhile advice!
This is a graduation work for my college, Digital arts & entertainment. 

I've used a vector displacement map to create the shape and wrote a paper on my research, which I would post as well should anyone be interested.

A few questions for the more experienced technical artists: 
- How would you go about creating overturning waves?
- How can I improve the realism to my beach waves and/or water material?
- Are there any in-game examples of these types of waves? (I have looked for them all over, but didn't find any...) 
- Can you explain to me how a vector displacement map works? I did not manage to understand the weird pattern in the background. How do the solid colors represent a vector?  Can I mask out one channel to get vertical displacement, another for horizontal displacement?
