Solving UV interpolation issues, or just getting my road to work

I would really love to have a brick cobble road that bends non-uniformly like in the picture below

Obviously, the way uv interpolation works means that I can't just straighten out this bend to use with a tiling texture without having artifacts like above. It's also probably not very realistic due to how the bricks would need to cut and fit, but my brain is just stumped on this. I tried searching for solutions but that yielded nothing. The cop out solution I'll go for if I can't solve this is to uv it normally and just use a tiling rocky cobble but I like the elegance of laid bricks.

Endgame is UE4.
