How do you photograph surfaces to get the best texture?

Hi Polycount.

So lately I was thinking about textures and how to capture them from photos, However getting a clean image without AO is a huge hassle and there has to be a way to avoid this while also getting better textures in the process.

Recently i watched the video EPIC put out on their trip to my home country of New Zealand to photosource textures for the Kite demo and it really inspired me to create something to simply photograph surfaces from all angles with diffuse lighting (Most likely at night time so the only light source is from the rig)

So I was wondering what method you guys use to quickly capture surfaces for use in photosourced textures, And how you extract maps like Normal, Height, Cavity and AO.
