You may get better normal map results doing the small details, bolts, etc. via Ndo. The small details on the high poly may get lost in the bake or come out not as pronounced/defined as you would like.
Just remember your low poly and normal map is king. Make your high poly with the sole purpose of an end result normal map.
Its not a bad start. Your stock and fire control group have metallic scratches. They shouldn't as they are solid polymer. Check out some images of an MP5 fire control group so you can see how it separates from the receiver. Your front sight post is also missing from the sight.
It can, but since it is a solid material vs a coated material like painted metal, it won't reveal a different color. Polymer doesn't scratch the same as a coated material. With use and wear, the rough textured finish will become smoother and more reflective. Nicks and gouges can happen anywhere though.

As in more distance between control edges so it's not as sharp? I seem to have a hard time figuring out what best distance is

I think it has to be more rounded.

And the Shape of your Rear Sight is not finished.
The Shell Ejection Window has to be more rounded.
