Setting up a scene with HDR and gray background for presentation?

Hi, I would like to create a scene to present my props and want to use an HDR with a gray background. Something like this. 

The above was rendered in 3DO however there are some projects that will need to use materials in unreal. This is what I have in Unreal. This is using the lightstage. 

I also tried using a post-process volume in a new scene and putting the HDRI in the ambient cubemap part. however that made anything inside of it just completely blown out. However that may just be due to the auto exposure.
