zBrush trim/flatten/polish brushes: locking down to a certain depth?

I usually find myself getting some really odd uneven faces when I trim (dynamic) and polish in zbrush. Is there a way of locking it down to a level, so that all of the faces hit that level and stop? You can see that here, in a blender video. Fingers crossed something can be done similarly in zBrush.

I think what you might be looking for is under Picker > Orientation.

Cont Ori is standard behavior for most brushes, while Once Ori will lock in your stroke plane until you perform another stroke. The round icon next to these buttons is to set a custom orientation for your stroke (click and drag to set).

Ah! Awesome! Seems similar to how the Clay brushes function, levelling off until the next click. Thanks.
