Retopology question

Hey everybody, I am working on a game project for class and I was chosen for the job of character artist. Im pretty descent at sculpting stuff for a 3d print, but ive never really made anything that needed a retopo job on it before. I was wondering the best way of going about it. Ive seen some people retopo the whole character gear and all, and ive seen people do it in pieces. The character is not customizable and neither is the armor. What is the best way going about it? My target polycount is around 8k.
